MISO EGGPLANT
Ingredients
1-2 Eggplant
1 TBSP West coast chickpea miso or Yuzu Chili Chickpea Miso or Gochujang style Chickpea Miso
1 TBSP Sake or water
1 TBSP Vinegar
1 tsp Sweetener(liquid type is better such as maple syrup/ honey/ agave syrup)
1 tsp Grated ginger(optional)
Instructions
Slice eggplant in about half inch
Mix all other ingredients
Saute eggplant with some oil until golden colour on both sides
Turn the heat off then add sauce
