Q. I noticed that the Garlic Chili Koji / West Coast Chickpea Miso has a bit of slimy texture…?
A. That texture is from Kombu, one of the key ingredients in Garlic Chili Koji, West Coast Chickpea Miso, and Yuzu Chili Miso. Kombu is a type of seaweed rich in the dietary fibres, algin and fucoidan. Kombu gives our Garlic Chili Koji, West Coast Chickpea Miso, and Yuzu Chili Miso its umami, texture and consistency.

Q. There is a white sediment which didn’t completely dissolve into the miso soup…
A.
The white sediment you see collecting on the bottom of your dish is KOJI, which is very nutritious and good for your gut.

Q. Do I have to put products in a fridge even before opening a jar?
A. YES.
All our products are unpasteurized. In order to keep beneficial enzymes in products fresh, please keep refrigerated at all times before and after open.

Q. Can I keep MISO in a freezer?
A. YES.
Miso can be stored in a freezer as well as Shio-Koji. It will not freeze. Unpasteurized miso keeps fermenting slowly even in a fridge and slightly change the flavour over time. We recommend keeping miso in a freezer if you do not want miso to change the flavour.
