Our Story

Our Values

Food is LOVE.

At Cozy Koji, we believe that eating is an act of self-care.

Unlike other self-care rituals. eating is not something you have to add into your daily routine. We all have to eat to live, so the choices that we make to nourish ourselves each day are transformed into an act of self-love.

It really is that simple. And simplicity is the heart of our business.

Flavour-FULL & Effort-LESS.

Have you ever had a first bite of something, and thought, ”hmmmm…there is something missing…”? It is this missing something that makes us reach for the bag of chips over the bowl of carrot sticks. This something is known as “umami”.

Japanese food culture defines this fifth flavour profile (adding it to the more commonly known flavours - salty, sweet, sour and bitter) as a certain satisfying savouriness, found in foods like beef, mushrooms, and cheese (and yes, potato chips). We crave it.

Foods fermented by Koji are a healthy source of umami. Adding koji products as a base ingredient to a marinade, a soup, or a sauce is way to add an instant flavour bomb.

At Cozy Koji, we craft delicious and nutritious soup starters, sauces, and marinades so that you can feed your family with ease. Our mission is to make eating healthy flavour-FULL and effort-LESS.

Get to KNOW and USE koji.

We have been harnessing the goodness of koji to feed our loved ones and to improve our gut health. Koji - an essential element of Japanese fermented foods - has always been a staple in our family kitchens. In the West, we are familiar with miso, but koji is a relatively new ingredient here.

Cozy Koji is excited to introduce you to this incredible ingredient by:

Koji is for EVERY BODY.

We know that feeding yourself and your family healthfully can often be a challenge. Supermarket shortcuts are often loaded with salt, sugar, saturated fats, and mystery chemical compounds you can’t pronounce. At Cozy Koji, we offer meal-starters and sauces that are EASY and SIMPLE to use at home. We make a bowl of ramen soup as easy as tearing open an instant noodle package, but with wholesome, nutritious ingredients.

We want EVERY BODY to enjoy Cozy Koji: grown-ups and kids, vegetarians and vegans, junk food lovers and health nuts, students and singles, conscious carnivores and curious foodies.

Support LOCAL and SUSTAINABLE.

Wherever possible, we source raw ingredients that are local and organic. We partner with Canadian Kelp in Bamfield, BC who provide us with kelp and kombu and Brightside Blueberries & Such in Duncan, BC who provide us with garlic with no synthetic fertilizers nor any pesticides.

We offer our sauces and starters in reusable mason jars so that you can repurpose them with your own creations. All our packaging are biodegradable and recyclable as well.

Satomi Kawamura
Director of Creative Development

Certified Japanese fermented food advisor | Certified Koji making instructor

Everything is connected…

Satomi first began experimenting with making her own Japanese fermented foods in her late 20s. Her mom, just hospitalized for pancreatic cancer, was craving cucumber dipped in miso paste, a savoury summer snack popular in Japan. Rather than bringing her mom a store-bought version, Satomi decided to try making her own. Working with koji as a raw ingredient, Satomi was surprised how simple it was to make miso from scratch, and how tasty it turned out.

Crafting her own comfort food and sharing it with her loved ones has become Satomi’s lifelong passion. Suffering from her own digestive issues since she was a teenager, she dug deep into learning about the health benefits of koji, and has been creating recipes ever since.

As Cozy Koji’s Director of Creative Development, she perfects each recipe for our signature Starters & Sauces, and is always experimenting with new ideas. She shares her delightful recipes and nutritional information on our blog so that you can easily nourish your family with delicious Japanese comfort foods made right in your own kitchen.

Shino Yamashiro
Director of Business Development

Certified Sake Sommelier

Eating is a life-long, everyday passion.

Shino has been working in the Victoria restaurant industry, and as a Sake sommelier(KIKI- SAKESHI certified by SSI), for nearly ten years. For many years, Shino lived her life at a hectic pace. Daily meals were often quick stops for take-out food on the way home from a long shift. When the COVID-19 pandemic shuttered restaurants in the spring of 2020, Shino found herself, for the first time in many years, with time to spend in her own kitchen.

Her first priority was to prepare nourishing daily meals for herself and loved ones. She began to re-familiarize herself with the home-cooked Japanese comfort foods she grew up with. In a few short months, she began to see the benefits to her health and finances, and the momentum continues to grow.

As Director of Business Development, Shino seeks retail and distribution opportunities to showcase Cozy Koji’s handcrafted Starters & Sauces. With a passion for education, she also looks to share the expertise, and growing body of knowledge, she and Satomi have developed along the way.
