  1. Prep the chicken: Poke the thick parts with a fork. Marinate with shio-koji for at least 30 minutes (or up to 2 weeks).

  2. Prep the potatoes: Cut into chunks, mix with shio-koji. Let sit for 30 minutes to a few hours. Add black pepper or herbs if you like.

  3. Bake:

    • Preheat oven to 400°F (200°C).

    • Place chicken and potatoes on a tray.

    • Bake for 25–35 minutes, until chicken is fully cooked.
