OVEN BAKED CHICKEN + POTATO
Ingredients
1 lb Chicken breast *1
3 TBSP Any Shio-Koji (plain・ traditional, chive lemon or yuzu kimchi)
1 lb potatoes, sweet potatoes, or yams
2 tbsp Any Shio-koji (plain・ traditional, chive lemon or yuzu kimchi)
Instructions
Prep the chicken: Poke the thick parts with a fork. Marinate with shio-koji for at least 30 minutes (or up to 2 weeks).
Prep the potatoes: Cut into chunks, mix with shio-koji. Let sit for 30 minutes to a few hours. Add black pepper or herbs if you like.
Bake:
Preheat oven to 400°F (200°C).
Place chicken and potatoes on a tray.
Bake for 25–35 minutes, until chicken is fully cooked.
