MISO MARINATED CHICKEN BREAST SALAD

Ingredients

  • 2 TBSP West coast chickpea miso or Yuzu Chili Miso

  • 2 TBSP Apple cider vinegar

  • 2 TBSP Extra virgin olive oil or grape seed oil

  • 1/2 teaspoon Sweetener ( liquid type is better such as maple syrup/ honey/ agave syrup)

  • 1 lb Chicken breast

Instructions

  1. Mix dressing marinade ingredients well.

  2. Poke chicken breast with a fork a few places and marinate using half of the marinade at least 30 minutes up to 24 hours.

  3. Place chicken breast in a pan with over medium heat, cook until it gets brown. Flip over, put a lid on, reduce the heat to low until chicken is fully cooked.

  4. Add half of the marinade in the pan.

  5. Serve on salad or as it is and pour the liquid left in a pan over the chicken!

NOTE
* Any miso works fine, I tried using shiro-miso and aka(red)-miso. Shiro-miso is slightly sweeter than aka-miso. west coast chickpea miso / yuzu chili miso already has some ginger and garlic in it so we recommend adding a tiny bit of grated ginger and garlic in marinade if using regular miso.
