It’s a koji drink called Amazake or Amakoji, made with rice koji and water.
The unique sweetness comes from enzyme activity from koji and rice starch converted into sweetness, Amylase.

This drink is called a drinkable IV drip in Japan because it’s so high in nutrition.
We added our favourite fresh yuzu ( Japanese citrus ) peel to it! 🍋
