SHIO-KOJI SALMON

Ingredients

  • Salmon fillet

  • Shio-Koji (use 10% of the weight of salmon)

Instructions

  1. Wipe excess water with kitchen towel and cut salmon into desired sizes.

  2. Spread shio-koji over salmon, marinate at least 30 minutes up to a couple of days. (freezable)*

  3. Pan fry : put parchment paper in a pan, salmon(skin down) on medium high heat for 5 minutes. Flip and put a lid on, turn the heat down to medium low for 5-10 minutes.

    Broil : place salmon(skin down) on a tray with parchment paper, low broil for about 5 minutes, flip and cook more for 5 minutes or until salmon gets nice and brown on top.(easy to burn so please keep eye on it)

NOTE
* You can freeze marinated salmon in a reusable bag. Freeze right away after applying shio-koji. Use it with in a few month. The best way to thaw fish is in a refrigerator for overnight, but you can thaw on a kitchen counter if you are hurry(cook as soon as the fish gets soften)
